My Favourite Dairy Free and Vegan Pancake Recipes

Happy Pancake Day! Pancakes are definitely one of my favourite starts to the day, and I've had lots of fun recently experimenting with different recipes to try and cut milk out of my diet as much as I can, so I thought I'd share the best dairy free and vegan recipes I've come up with so far with you.

For the dairy free butter, I use Vitalite which is available in most supermarkets. 

Dairy Free Vanilla Pancakes

  
INGREDIENTS:

To serve 3 (makes 9 pancakes):
  • 1/2 tbsp baking powder
  • 1 pinch of salt
  • 1/2 tsp white sugar
  • 1/2 tsp vanilla essence
  • 1 large egg
  • 15 grams dairy free butter + extra for frying
  • 150ml almond milk
  • 112 grams plain flour

INSTRUCTIONS:
  1. Beat the egg, melt the butter and sift flour before adding all ingredients into a blender, and blending until mixture is a smooth consistency.
  2. Once blended, transfer the mixture to a jug to make it easier to pour the batter
  3. Heat a pan, then add dairy free butter for frying (coconut oil works nicely too!)
  4. Pour a little bit of the mixture in the pan, and turn once the top begins to blister and bubble. The second side will need less than a minute, then repeat the process for the remaining mixture.

Vegan Banana and Cinnamon Pancakes


INGREDIENTS:

Serves 3 (makes 9 pancakes):

  • 1/2 large ripe banana
  • 15 grams dairy free butter + extra for frying
  • 150ml almond milk
  • 112 grams plain flour

INSTRUCTIONS:
  • Mash the banana, melt the butter and sift flour before adding all ingredients into a blender, and blending until mixture is a smooth consistency.
  • Once blended, transfer the mixture to a jug to make it easier to pour the batter
  • Heat a pan, then add dairy free butter for frying (coconut oil works nicely too!)
  • Pour a little bit of the mixture in the pan, and turn once the top begins to blister and bubble. The second side will need less than a minute, then repeat the process for the remaining mixture.

It can take a while to experiment with quantities to get it perfect for your personal tastes, but these have definitely been my favourites so far!
